As the weather starts to get colder, we’ve been craving something delicious to warm us up. Thankfully, we found the perfect recipe for a Thai Peanut Butternut Squash Soup on This soup is like a hug on a cold day. With perfect flavors of peanut butter and squash, this soup makes a great addition to dinner or is filling enough to be the main course!

Ingredients and Instructions

The ingredients are simple and fresh. Most of them you’ll probably already have in your kitchen, and if not they are very easy to pick up at the grocery store or farmer’s market! To make this soup from scratch, you’ll need butternut squash, onions, garlic, ginger, olive oil, salt, pepper and red pepper, vegetable broth, peanut butter, and soy sauce. Feel free to add sriracha, basil, coconut milk, and peanuts on the top for some bonus flavor! This recipe is gluten and vegan-friendly. One of the greatest things about this soup is how well it stores in the fridge or freezer, so make a big batch and feast on it all week long!
